The rust-resistant porcelain-coated cast-iron grates are durable and allow you to enjoy the same performance each new cooking session. The side burner is an excellent way to further spice things up by preparing sauces or sides. There are top-ported burners that provide a wide temperature range while the lid-mounted temperature gauge allows you to monitor the heat. Since the burners emit heat from the top, this allows for even burning. However, as mentioned in the What We Don’t Like section, one of the problems we noticed is that these burners tend to run cool. Coming from a popular grill brand, the Char-Broil Performance Stainless Steel 4-Burner Gas Grill is a medium-sized propane gas grill with quite a few good features.
So, expect style, decent quality, and reasonably durable grilling gear. When you make rubs at home we recommend you add salt first then the herbs and spices because salt penetrates deep and the other stuff remains on the surface. We put salt in these bottled rubs because all commercial rubs have salt and consumers expect it. You can still use these as a dry brine, just sprinkle the rub on well in advance to give the salt time to penetrate. For very thick cuts of meat, we recommend adding a bit more salt.
Lightweight construction consists of a thin 430 stainless steel lid, control panel, single door and handles and painted steel side shelves and cart on four casters. Not only does it provide a welcome bit of storage space, but it also protects your propane tank and the regulator from the effects of wind, snow, and rain. That’s good for both safety and performance, and it’s a heck of a lot nicer to look at, too, than an exposed propane tank.
I spent the better part of two weeks grilling on the Char-Broil Performance XL. It looks good, performs well and at $299, it was the most affordable grill we tested. I’d recommend the Char-Broil Performance XL to beginners and grillmasters alike.
